It can also help if you inject a bit of lemon (or lime) juice on the surface of the guacamole into the reservoir, then get some plastic wrap and place it directly in the guacamole to get rid of air. I love avocado, and unfortunately, its "shelf" life is short. I usually make the right amount of guacamole, if possible.

hold the avocado pit in the mix .... Sprinkle a little lemon juice and cover with tight lid
